My Review about it!

I will be straight with you. I wanted to love this one.

It arrives looking like a tiny birthday cake. Two pale sugar cookies, a thick layer of pink vanilla buttercream pressed between them, more buttercream piped on top in soft dollops, and a scatter of rainbow sprinkles. It is the prettiest thing on the board this week. My first reaction was that Crumbl finally made a cookie that photographs itself.

Then I ate it.

The sugar cookie is soft and buttery, and honestly it is one of the better sugar bases Crumbl has done. It is not as aggressively sweet as their usual pink sugar cookie. That part I liked. The problem is everything stacked around it. The pink buttercream in the middle is thick and very sweet, and the dollops on top pile more of the same sweetness on. By the third bite the flavor stops evolving. It is vanilla, then sugar, then vanilla again.

The ice cream part is the piece that let me down. The frosting has that cool creamy texture that does remind you of a soft serve cake from the grocery store freezer. But the flavor never follows. There is no cold cream tang, no crunchy chocolate layer, nothing that says ice cream cake. It reads as a very sweet sugar cookie in a costume. A pinch of salt in the frosting would have fixed most of it.

The sprinkles do nothing for taste. They do everything for the vibe. I understand why they are there.

Would I order it again? In mini form, yes. At 950 calories for the full size, the frosting to cookie ratio is a lot to get through alone. The mini gives you the same look and the same flavor without the sugar headache at the end.

My rating: 7.5 out of 10. Gorgeous, nostalgic, and fun to bring to a party. Just do not expect it to taste like ice cream cake.

This thing looks like a 1980s mall food court fever dream rendered in frosting — pink, excessive, cheerful, and completely unconcerned with subtlety. The two sugar cookies are soft, buttery, and restrained…

FAQs

The Almost Everything Bagel Cookie usually gets the nod as the rarest flavor Crumbl has ever dropped. It was a savory cookie rolled in everything bagel seasoning, a total departure from anything sweet, and it only showed up once before disappearing from the rotation for good. Since Crumbl runs on a weekly flavor drop system with over 200 flavors released to date, a lot of oddball or one time flavors never come back, which is part of what keeps fans checking the app every Sunday night.

In most ice cream cake recipes, the cookie crumble layer is a mix of crushed chocolate sandwich cookies (think Oreo style crumbs) blended with melted butter and sometimes a little fudge or chocolate syrup to hold it together. It sits between layers of ice cream to add crunch and a chocolate hit that contrasts the smooth, cold texture around it. In Crumbl’s own Ice Cream Cake Sandwich Cookie, that classic crumble layer is swapped out for a soft sugar cookie base instead, which is why the cookie leans more vanilla and buttercream than the crunchy chocolate version you would expect from a traditional ice cream cake.

The Brownie Sundae currently holds that title, clocking in around 1,130 calories with roughly 220mg of cholesterol in a single dessert.

Crumbl does not sell a traditional ice cream sandwich as a permanent menu item. What they do have is Crumbl Creamery, a separate ice cream concept available at select locations where you can get scoops and shakes, and the brand leans into ice cream themed flavors like the Ice Cream Cake Sandwich Cookie to capture that same craving in cookie form. Fans have also taken matters into their own hands, making DIY ice cream sandwiches by scooping store bought ice cream between two Crumbl cookies at home.
